His culinary philosophy combines locally sourced, seasonal ingredients with the best cuts from Japan, centered on quality control, excitement, and surprise. Chef Moso draws inspiration from his childhood travels across Southeast Asia and his mother's restaurant legacy, having trained at Bangkok Square and Origami Sushi upon arriving in Florida at age 15.
